Great video! I'm curious to try some zero proof spirits I just have issues with the shelf life :P I was looking at a zero proof whiskey but it was $50 and only lasts 3 months once opened :S Pectinase is amazing! If ou segment a bunch of your mandarins, add them to a bowl of water with some pectinase, it will dissolve and remove all the skin and pith leaving you with perfectly clean segments, just like from a can but so much fresher obvisouly!
