I have had higher end knives up till SG2 steel over $300 Sold them Preferred the cheapest sub 40 Tojiro that is not even full tang Super thin, cuts like a laser, super light Friends ended buying dozens of this humble series after coming to my home and used them I do mod the handle sometimes to make it fatter Awesome knives

I use a a ZT reaver cleaver for anything robust (pineapple, watermelon, squash, people, wood for a campfire, etc) It’s unwieldy and not very practical for cooking but I paid 500$ for it and It’s fun
