Protection rackets have real value We just call it "the police" The mafia was just the police of certain territories, including once upon a time in NYC when the police did not really protect Italians Also, mafia families absolutely cared about honor and religion back in the day, you just have no empathy for people from another culture or time if you can't get that It is modern Americans, including the mafia, who don't care about anything but money
